Kerala Style Kumbil Appam is a beloved snack, especially enjoyed during tea time in Kerala. This delightful treat combines whole wheat flour with ripe, mashed bananas, enhanced by the sweetness of jaggery and the richness of grated coconut. The traditional method involves wrapping the mixture in a bay leaf cone and steaming it, imparting a wonderful aroma and flavor. While bay leaves are often used for their distinctive taste, banana leaves also work wonderfully, adding their own unique essence to the dish. Kumbil Appam is a healthy, delicious choice for an afternoon snack, and can be customized with other ripened fruits like jackfruit or Nendra Vazhaipazham for a different twist.

Ingredients:

  • 1 cup Whole Wheat Flour
  • 3 Ripe Bananas (fully ripe)
  • 1/2 cup Fresh Grated Coconut
  • 3 tablespoons Jaggery
  • 1 teaspoon Cardamom (Elaichi) Pods/Seeds

Instructions:

  1. In a mixing bowl, combine the whole wheat flour, grated coconut, and cardamom powder.
  2. Peel and mash the bananas thoroughly, then add them to the flour mixture. Mix everything well until you get a crumble-like texture.
  3. In a small pan, heat jaggery with 1/4 cup water until it completely melts. Pour the melted jaggery into the crumble mixture and combine it well to form a sticky dough.
  4. Prepare your steamer by heating water in the base. You can also use an idli steamer for this recipe.
  5. Cut banana leaves into rectangular shapes. Roll each piece into a cone and stuff the prepared mixture into the cone. Seal the open end of the cone by bending it over and securing it with a twig or string.
  6. Repeat this process until all the mixture is used up.
  7. Carefully place the filled cones in the steamer and steam for about 15 minutes.
  8. Serve your Kerala Style Kumbil Appam hot with Masala Chai for a perfect tea-time snack!
