Ridge Gourd Pachadi (Turai Pachadi)

Ingredients:

  • 1 ridge gourd (turai), peeled and chopped
  • 2 green chilies, thinly sliced
  • 2 tsp tamarind paste
  • 2 garlic cloves, chopped
  • 1 tsp cumin seeds
  • Salt, to taste
  • 1 tsp oil

Preparation Time: 15 minutes
Cooking Time: 15 minutes

Instructions:

  1. Heat oil in a pan and add the ridge gourd, green chilies, and tamarind paste. Cook for 3-4 minutes until softened.
  2. Turn off the heat and let the mixture cool.
  3. Once cooled, transfer the mixture to a grinder. Add garlic, cumin seeds, and salt, and grind into a smooth paste.
  4. Add a little water if needed to achieve the desired consistency for the chutney.
  5. Serve the Ridge Gourd Pachadi in a bowl.
