Ridge Gourd Pachadi (Turai Pachadi)

Ingredients:
- 1 ridge gourd (turai), peeled and chopped
- 2 green chilies, thinly sliced
- 2 tsp tamarind paste
- 2 garlic cloves, chopped
- 1 tsp cumin seeds
- Salt, to taste
- 1 tsp oil
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Instructions:
- Heat oil in a pan and add the ridge gourd, green chilies, and tamarind paste. Cook for 3-4 minutes until softened.
- Turn off the heat and let the mixture cool.
- Once cooled, transfer the mixture to a grinder. Add garlic, cumin seeds, and salt, and grind into a smooth paste.
- Add a little water if needed to achieve the desired consistency for the chutney.
- Serve the Ridge Gourd Pachadi in a bowl.
