Roast the Vegetables:
Heat oil in a pan or kadhai. Add the chopped onion, garlic, and red capsicum (Shimla mirch). Sauté until the capsicum softens and becomes tender. Sprinkle a little salt and cover the pan. Let the vegetables cook until the capsicum becomes soft and cooked through. -
Add Tomatoes and Spices:
Once the capsicum is tender, add chopped tomato and dried red chilies. Cook until the tomatoes soften and blend with the other vegetables. Turn off the gas once everything is well-cooked. -
Blend the Mixture:
Transfer the cooked mixture into a blender or mixer. Add a pinch of salt and grind it into a smooth paste, making a thick chutney. Set aside. -
