Cashews (Kaju) 10, soaked
Onion (for paste) 1, soaked
Tomato (for paste) 1, soaked
Garlic (Lahsun) 3 cloves
Ginger (Adrak) 2-inch piece
Cumin Seeds (Jeera) 1/2 tsp

Instructions:

  1. Prepare the Paste:
    To begin, soak the cashews and one onion in warm water for about 2 minutes. Once soaked, drain the water and blend the cashews, soaked onion, tomato, garlic, ginger, and cumin seeds together, adding a little water as needed to form a smooth paste. Set this paste aside.

  2. Cook the Whole Spices:
    Heat ghee in a pan or kadai over medium heat. Add the bay leaf, cloves, and cinnamon stick, allowing them to cook for about 15 seconds until they release their fragrance.

  3. Sauté the Onions:
    Add the chopped onion to the pan and sauté it until it turns golden brown. This will give the dish a rich base flavor.

  4. Add Tomatoes:
    Now, add the chopped tomatoes to the pan and cook for a few minutes, allowing them to soften and blend with the onions.

  5. Add the Vegetables:
    Add the chopped cauliflower, green beans, carrots, and peas to the pan. Stir everything together to ensure the vegetables are evenly mixed with the onion-tomato base.
