Prepare the Potatoes and Yogurt Sauce:
Begin by boiling the potatoes until soft. In a small bowl, combine the Greek yogurt, extra virgin olive oil, salt, pepper, and lime zest. Stir everything together, making sure the mixture is smooth and well-blended. Set it aside for later. -
Prepare the Fish Mixture:
Once the potatoes are cooked and have cooled slightly, peel and mash them. In the meantime, clean and peel the shrimp, which should yield around 150g. Add the cod fillet, shrimp, and fresh spinach (well-washed and dried) to a food processor. Blend until the mixture is smooth and well combined. Add the mashed potatoes, season with salt and pepper, and then crack in the egg to help bind everything together. -
Form the Fish Cutlets:
Wet your hands with a little water to prevent sticking. Take small portions of the fish mixture and shape them into round patties. Gently flatten each one with your hands. Once shaped, place the cutlets in the freezer for about 10 minutes to firm up. -

Heat 4 tablespoons of olive oil in a frying pan over medium heat. Once the oil is hot, carefully add the cutlets to the pan. Fry the cutlets for about 3 minutes on one side, then flip them over and cook for another 2 minutes, or until they turn a golden brown on both sides. -
