Pomegranate Jelly

Ingredients:

Pomegranate 250g (about 5 pomegranates)
Sugar 500g
Fructose Pectin 1:1 1 packet
Lemon 1

Instructions:

  1. Prepare the Jars: Start by sanitizing your jars and lids, following the guidelines provided by health authorities (refer to the bottom of the recipe for more information on proper sanitization).

  2. Prepare the Pomegranates: Peel the pomegranates, carefully removing the seeds. Make sure to discard any bitter yellow parts and the peel, as they are not suitable for the jelly.

  3. Extract the Juice: Pass the pomegranate seeds through a food mill or strainer to extract the juice. You should obtain approximately 850g of pomegranate juice from the 5 pomegranates.

  4. Strain and Prepare the Juice: Filter the juice to remove any remaining pulp or seeds. Pour the filtered juice into a large saucepan.

  5. Add Flavor: To the juice, add the juice of half a lemon, the sugar, the packet of Fructose Pectin, and the whole peel of the lemon (use a vegetable peeler to extract just the yellow part of the peel).

  6. Cook the Jelly: Bring the mixture to a boil and let it cook for about 30 minutes, stirring occasionally.

  7. Remove Lemon Peel: After 30 minutes, remove the lemon peel from the saucepan.

  8. Fill the Jars: Pour the hot pomegranate jelly into the sanitized jars, filling them to the top. Seal the jars with the sanitized lids and place them upside down on a clean surface.

  9. Create a Vacuum Seal: The heat from the jelly will create a vacuum seal, preserving the jelly for long-term storage.

  10. Check the Seal: After the jars have cooled down, test the vacuum seal by pressing down on the center of the lid. If you do not hear the “click-clack” sound, the seal is secure, and your jelly is properly preserved.

Storage Tip: Store the jars in a cool, dark place. Once opened, refrigerate and consume within a few weeks.
