Crispy Pleurotus Cutlets (Pleurotus Mushrooms)

Instructions

  1. Prepare the Mushrooms
    Start by cleaning the mushrooms thoroughly. Use a damp cloth to wipe the caps and stems to remove any dirt. Then, with a small knife, carefully separate the stems from the clusters (2-3 per cluster). If needed, gently wipe the gills and caps with the cloth again to ensure there’s no lingering soil. Set the mushroom caps aside for cooking.

  2. Prepare the Breading Station
    Set up a breading station with three separate bowls. In the first, beat the two eggs, adding a pinch of salt to season. In the second bowl, sift the all-purpose flour, and in the third bowl, place the bread crumbs.

  3. Coat the Mushrooms
    Take each mushroom cap and first dip it into the flour, ensuring it’s fully coated. Then, dunk it into the beaten eggs, allowing any excess to drip off, and finally, coat it generously in the bread crumbs. Repeat this for each mushroom cap until all are breaded.

  4. Fry the Cutlets
    Heat a deep pan or a pot with a heavy bottom, and pour in the peanut oil for frying. The ideal frying temperature is between 170°C and 180°C (338°F – 356°F). To monitor the temperature, use a food thermometer. When the oil is hot enough, carefully place the breaded mushrooms into the oil. Fry until golden brown and crispy, about 3-4 minutes per side. Once cooked, use a slotted spoon to remove the cutlets from the oil and drain any excess oil on paper towels.

  5. Alternative Baking Method
    For a healthier alternative, you can bake the cutlets in the oven instead of frying them. Preheat the oven to 180°C (356°F) and place the breaded mushrooms on a baking tray lined with parchment paper. Bake for about 15-20 minutes, or until golden and crispy.

  6. Serve and Enjoy
