Instructions:
- Begin by peeling the red onions. Cut them in half, and then slice each half into thin rings. Gather the thyme sprigs and prepare the bay leaves.
- In a mixing bowl, combine the sliced onions with brown sugar, white wine vinegar, and fine salt. Add the thyme and bay leaves to the mixture. Stir gently to combine all the ingredients evenly.
- Cover the bowl with plastic wrap and allow the mixture to rest for a few minutes to help the flavors meld together.
- Once the ingredients have settled, transfer everything into a saucepan. Add the water to the pan and bring the mixture to a simmer over medium heat.
- Cover the saucepan and cook for approximately 60 to 70 minutes. Stir occasionally to prevent the compote from sticking to the bottom of the pan and ensure even cooking. The onions should soften and the liquid should reduce.
- After the cooking time has passed, remove the saucepan from the heat and allow the compote to cool to room temperature.
- Once cooled, transfer the sweet red onion compote into a glass jar for storage.
