Tzatziki and Tuna Sandwiches

Instructions

To prepare the Tzatziki and Tuna Sandwiches, start by making the tzatziki sauce:

  1. Prepare the tzatziki: Finely chop the fresh mint leaves, which should be washed and dried. Then, finely chop the garlic cloves and mash them into a paste using the flat side of a knife on a cutting board.

  2. In a bowl, combine the Greek yogurt, extra virgin olive oil, a pinch of salt, a dash of black pepper, the lemon zest, lemon juice, and the freshly chopped mint. Stir everything together with a spoon until the mixture is smooth and well-blended.

  3. Prepare the cucumber: Use a vegetable peeler to slice the cucumber into very thin rounds.

  4. Assemble the sandwich: Lay one slice of sandwich bread flat on your work surface, positioning it in the opposite direction from the cucumber slices. Spread a generous tablespoon of the tzatziki sauce over the slice of bread. Then, place another slice of bread on top of the first one, spread more tzatziki sauce on this second slice, and add some canned tuna for texture and flavor.

  5. Spread a final layer of tzatziki sauce on top of the tuna, and gently lift the edges of the cucumber slices. Use the edge of a knife to tuck the cucumber under the sandwich so that the cucumber slices form a layer around the sandwich.

  6. Finish the sandwich: Flip the sandwich upside down to fully encase the sandwich in cucumber slices, ensuring the open side is facing downward to hold everything together.

  7. Cut and serve: Cut the sandwich in half, then slice each half into two triangles, creating four bite-sized pieces.
