Begin by selecting the chestnuts, discarding any that are damaged, cracked, or open. Place them in a bowl and cover them with water at room temperature. Allow the chestnuts to soak for about 2 hours. -
Washing Chestnuts:
After soaking, rinse the chestnuts under cold running water to remove any dirt or debris. Pat them dry with a kitchen towel. -
Incising Chestnuts:
Carefully make an incision on each chestnut by cutting a horizontal line all the way around the circumference of the chestnut. This will make peeling them easier later. Be sure to make the cut on both the flat and rounded sides. -
Boiling Chestnuts:
Bring a pot of water to a boil, adding a pinch of coarse salt. Once boiling, add the chestnuts to the pot and cook over moderate heat for 40-45 minutes. Make sure the chestnuts are tender. -
