Begin by preparing the zucchini. Wash and trim the ends, then slice the zucchini diagonally into pieces about 5-6 mm thick.

Heat a generous amount of oil in a deep fryer or pan, bringing it to around 160°C (320°F) for frying.

Fry the zucchini slices in batches, ensuring that you don’t overcrowd the pan. In about 2-3 minutes, the slices will turn golden and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil. Continue frying the remaining slices.

While the zucchini is cooling, cut the smoked provola cheese into thin slices (about 3-4 mm thick). Pat the cheese slices dry with paper towels to remove excess moisture.

Next, slice the Neapolitan salami into thin rounds, approximately 1-2 mm in thickness. You’ll need 14 slices, one for each zucchini “sandwich.”

Now it’s time to assemble the stuffed zucchini. On each fried zucchini slice, place a piece of provola cheese, and top with a slice of salami. Carefully place another slice of zucchini on top, creating a little “sandwich.”

In a shallow bowl, beat the eggs with a pinch of salt and black pepper until well combined.

Gently dip each stuffed zucchini into the egg mixture, making sure it’s fully coated.
