Instructions:

  1. Prepare the Cherry Puree:
    Begin by blending the maraschino cherries along with their syrup until smooth, ensuring you get a fine, homogenous cherry puree.

  2. Combine Cherry Puree and Cream:
    Pour the cherry puree into a saucepan and add the fresh liquid cream. Heat gently until the mixture reaches around 90°C (194°F). Once at the right temperature, remove from heat and allow it to cool completely.

  3. Mix the Egg Yolk Mixture:
    Once the cherry mixture has cooled, whisk together the egg yolks with the rice starch and cornstarch. Add this mixture to the cooled cherry puree, stirring until well combined.

  4. Whisk the Egg Whites:
    In a separate bowl, beat the egg whites with sugar using an electric mixer or a hand whisk. Be sure to mix gently from top to bottom to preserve the volume of the egg whites.

  5. Prepare the Baking Ramekins:
    Butter and lightly sugar your soufflé ramekins. This helps the soufflé rise smoothly and evenly.

  6. Fill the Ramekins:
    Pour the prepared soufflé mixture into the ramekins, filling them all the way to the top. Use a spatula to level off the surface for a perfect finish.

  7. Bake the Soufflés:
    Preheat your oven to 170°C (340°F) with static heat. Place the ramekins in the oven and bake for about 13 minutes. You can test the doneness by checking one soufflé first to ensure it’s perfectly risen and golden.

  8. Finishing Touches:
    Once the soufflés are puffed and golden, remove them from the oven and let them cool slightly. Dust the tops with powdered sugar just before serving for an extra touch of elegance.
