Instructions

Step 1: Preparing the Base

  1. Begin by melting the ghee in a heavy-bottomed pan or Kadai over low heat. This step ensures even heating and helps achieve the right texture in the ladoo mixture.
  2. Add the gram flour (besan) and semolina (sooji) to the melted ghee. Stir continuously over low heat for about 8–10 minutes until the mixture turns a rich golden brown color and begins to release a nutty aroma. The mixture should bubble lightly, indicating that it’s cooking evenly.
  3. To achieve the perfect ladoo texture, add a few sprinkles of water to the mixture and stir well. This will create small, delicate lumps that give besan ladoos their signature texture.

Step 2: Adding Flavor and Cooling

  1. Turn off the heat, then add cardamom pods or seeds and the raisins to the mixture. Stir thoroughly to distribute the flavors evenly.
  2. Allow the mixture to cool completely. This process may take 30 minutes or more. For faster cooling, you may transfer it to a different bowl or Kadai.

Step 3: Preparing Almond Flour

  1. While waiting for the besan mixture to cool, dry roast the almonds in the same pan on low heat until they become aromatic and lightly browned. This step enhances the almond flavor.
  2. Once cooled, grind the almonds in a blender or grinder until they reach a fine flour-like consistency. Be careful not to over-grind, as this could release oils and make the flour sticky.

Step 4: Combining Ingredients and Forming Ladoos

  1. When the gram flour mixture has cooled completely, add the sugar and ground almond flour. Mix thoroughly to ensure even distribution of the ingredients.
  2. Take small portions of the mixture and roll them between your palms to form round ladoos. To add an earthy and aromatic touch, press a few dried rose petals onto each ladoo.
  3. Place the ladoos on a sheet of parchment paper and allow them to set for about 10 minutes.
