Cumin seeds (Jeera) 1 tablespoon
Dry coconut (kopra) 1/4 cup
Dry red chilies 4 pieces

Instructions

  1. Prepare the Karam Vepudu Masala:

    • Begin by dry roasting the ingredients for the Karam Vepudu masala. Heat a heavy-bottomed pan over medium heat.
    • Once the pan is heated, add sesame seeds, white urad dal, chana dal, cumin seeds, dry coconut, and dry red chilies.
    • Roast the mixture well for about 8-10 minutes, stirring occasionally, until they become fragrant and slightly golden.
    • Set aside to cool completely, and then grind the roasted ingredients into a coarse powder using a mixer or spice grinder.
  2. Cook the Fish:

    • Heat a kadai or wide skillet and add sunflower oil for frying. When the oil is hot, add mustard seeds and let them crackle for a few seconds.
    • Add curry leaves and let them splutter for a moment.
    • Next, add the chopped ginger and garlic. Sauté for a minute or two until they become fragrant and soften.
    • Add the sliced onion and sauté until the onions turn soft and translucent, about 5-6 minutes.
  3. Fry the Fish:

    • Gently add the Basa fish fillets to the pan. Sprinkle in the red chili powder, turmeric powder, and salt.
    • Toss the fish gently so the spices coat the fillets. Allow the fish to cook for 1-2 minutes on each side, ensuring it gets cooked evenly.
  4. Add the Masala:

    • Once the fish is partially cooked, add the ground Karam Vepudu masala. Toss the fish and masala together gently to coat the fillets with the spices evenly.
    • If the mixture seems too dry, sprinkle a little water to help form a semi-thick sauce.
  5. Simmer and Serve:

    • Cover the pan and let the fish cook on low heat for about 10 minutes. This allows the flavors to blend, and the fish to absorb the masala.
    • Once the fish is fully cooked and the masala has thickened slightly, remove from heat.
  6. Serving Suggestions:

    • Serve this Andhra-style fish fry hot, garnished with fresh curry leaves or coriander if desired. It pairs wonderfully with Steamed Rice and a side of Palak Pappu (Spinach Dal) for a traditional, comforting meal.
