Kering Tempe Harum Recipe

Ingredients

Ingredient Quantity
Tempe 3 boards
Garlic 3 cloves
Shallots 6 cloves
Red chilies (optional) 5 (adjust to taste)
Bay leaves 3 leaves
Kaffir lime leaves 2 leaves
Ginger 1 piece
Galangal 1 piece
Lemongrass 1 stalk
Salt To taste
Flavor enhancer (optional) To taste
Sweet soy sauce To taste
Palm sugar 2 small pieces (or to taste)

Instructions

  1. Prepare the Tempe: Slice the tempe according to your preference. Heat oil in a pan and fry the tempe until crispy. Set aside.

  2. Blend the Spices: In a mortar, crush the garlic, shallots, and red chilies (if using). Add half a teaspoon of salt or to taste. The galangal, ginger, and lemongrass should just be crushed lightly.

  3. Sauté the Aromatics: In the same pan, heat a little oil and add the crushed spices, galangal, ginger, bay leaves, kaffir lime leaves, and lemongrass. Sauté until fragrant.

  4. Add Sweetness and Flavor: Stir in the palm sugar and sweet soy sauce, then pour in half a glass of water. Allow the mixture to simmer until well combined and aromatic.

  5. Combine with Tempe: Add the fried tempe to the pan. Mix well and cook for about 5 minutes. If desired, add a flavor enhancer to taste.

  6. Taste and Adjust: Check the flavor; if it needs more sweetness or salt, adjust accordingly.

  7. Serve: Once ready, remove from heat and serve. Enjoy the fragrant aroma of this delightful dish!
