Sup Iga Sapi (Beef Rib Soup)

Ingredients:

Main Ingredients:

  • 1/2 kg beef ribs, with a bit of fat

Ingredients A (to blend):

  • 1 ounce bird’s eye chili
  • 4 cloves garlic
  • 8 large shallots
  • 2 thumb-sized pieces of ginger
  • 1 thumb-sized piece of turmeric
  • 1/2 tablespoon black peppercorns
  • 2 candlenuts

Ingredients B (for sautéing):

  • 2 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1 thumb-sized piece of galangal, bruised
  • 4 cloves
  • 2 star anise
  • A small piece of cinnamon stick
  • 4 cardamom pods
  • 1/2 nutmeg

Complementary Ingredients:

  • 2 potatoes, cut as desired
  • 1 carrot, cut as desired
  • Water
  • Salt
  • Beef bouillon (Royco)
  • Chopped celery, to taste
  • Chopped scallions, to taste
  • Cooking oil, for blending

Preparation Steps:

  1. Prepare the Beef Ribs:

    • Begin by boiling the beef ribs in water with a pinch of salt. Ensure the water covers the ribs if you prefer a soup with ample broth. Boil until the ribs are tender. Skim off any black foam that forms on the surface, then reduce the heat to a simmer.
  2. Blend Ingredients A:

    • In a blender, combine all the Ingredients A (chilies, garlic, shallots, ginger, turmeric, peppercorns, and candlenuts). Add enough cooking oil to blend the ingredients smoothly. Avoid using water in this step to maintain the desired consistency.
  3. Sauté the Blended Ingredients:

    • Transfer the blended Ingredients A into a pan and sauté. There’s no need to add additional oil to the pan, as the blend already contains oil. Cook the mixture, stirring continuously, ensuring it doesn’t dry out or burn.
  4. Incorporate Ingredients B:

    • Add the Ingredients B (kaffir lime leaves, lemongrass, galangal, cloves, star anise, cinnamon, cardamom, and nutmeg) into the sautéed blend. Stir well until fragrant and the spices are well combined.
  5. Combine with Beef Ribs:

    • Transfer the sautéed mixture into the pot with the simmering beef ribs. Stir to combine thoroughly. Let the soup cook for about 20 minutes to allow the flavors to meld.
  6. Add Vegetables:

    • After 20 minutes, add the potatoes to the soup and let them cook for about 15 minutes. Then, add the carrots. This step-by-step addition ensures the potatoes and carrots are perfectly cooked and maintain their texture.
  7. Season the Soup:

    • Finally, add salt and beef bouillon (Royco) to taste. Adjust the seasoning according to your preference.
  8. Finish with Fresh Herbs:

    • Once the soup is fully cooked and well-seasoned, stir in the chopped celery and scallions. This adds a fresh, vibrant touch to the soup.
