Asparagus Curry Recipe

Ingredients:

Quantity Ingredient
1 Asparagus
4 Carrots
4-5 Potatoes
3 Dry coconut powder
2 Chili powder
1-2 Mustard seeds
2 Urad Dal
1/2 Jeera powder
1/2 Curry leaf
1 Salt
Turmeric
Roasted chana dal powder
Chopped coriander

Instructions:

  1. Chop the asparagus, carrots, and potatoes into 1/2 inch pieces.

  2. Heat a non-stick pan over medium flame.

  3. Add oil to the pan, followed by mustard seeds, jeera, and curry leaves for seasoning.

  4. Now add carrots and potatoes to the pan.

  5. Sprinkle turmeric over the vegetables and mix well. Cover the pan with a lid.

  6. After a few minutes, stir in salt and cover again for another minute.

  7. Add the chopped asparagus to the pan. Stir well and cover with the lid to allow them to cook.

  8. Check if all the ingredients are cooked properly after a few minutes.

  9. Reduce the heat to low and add roasted chana dal powder, dry coconut powder, and chili powder to the pan.

  10. Stir everything together and cover with the lid for a few more minutes. Then, switch off the stove.

  11. Garnish the curry with chopped coriander.

  12. Serve hot with rice, chapathi, or dosa. This curry also makes a delicious filling for sandwiches and is packed with nutrients for a healthy meal.
