Ingredients

For the Chicken Marinade:

  • 4 boneless skinless chicken breast halves
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 4 teaspoons fresh ginger/garlic paste (blend equal parts fresh ginger and garlic)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground mace
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Masala Sauce:

  • 8 ripe tomatoes, chopped
  • 1 green bell pepper, chopped
  • 2 cups water
  • 1/2 inch piece of fresh ginger, chopped
  • 4 garlic cloves, peeled
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 teaspoons garam masala

Instructions

Preparing the Chicken:

  1. Marinate the Chicken:
In a large mixing bowl, combine the plain yogurt, vegetable oil, lemon juice, 4 teaspoons of the freshly made ginger/garlic paste, ground cumin, ground mace, nutmeg, ground cardamom, salt, and black pepper. Mix these ingredients well to create a smooth, fragrant marinade.

  2. Coat the Chicken:
Thoroughly rub the chicken breast halves with the marinade, ensuring each piece is well-coated. Transfer the marinated chicken into a glass baking dish, cover it tightly with plastic wrap or a lid, and refrigerate for a minimum of 4 hours. This marinating time is essential for the chicken to absorb all the flavors.

  3. Preheat the Oven:
Set your oven to 350Β°F (175Β°C) to preheat while you prepare the next steps.

  4. Roast the Chicken:
Remove the chicken breasts from the marinade, discarding any leftover marinade. Place the chicken in a clean baking dish. Roast the chicken in the preheated oven for 8 to 10 minutes, basting with vegetable oil and pan drippings at least twice. Continue roasting until the chicken is tender, cooked through, and the juices run clear. Once done, remove the chicken from the oven and keep warm.

  5. Slice and Simmer:
Just before serving, slice the cooked chicken into bite-sized pieces. Place these slices into the simmering masala sauce for a few minutes, allowing them to heat through and absorb some of the sauce’s flavor.

Making the Masala Sauce:

  1. Cook the Tomatoes and Bell Pepper:
In a large saucepot, combine the chopped tomatoes and green bell pepper with 2 cups of water. Bring this mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the tomatoes are thoroughly cooked and soft.

  2. Prepare the Ginger/Garlic Paste:
While the tomatoes and bell peppers are cooking, place the chopped piece of fresh ginger and garlic cloves into a blender. Add a small amount of water and blend until you have a smooth paste.

  3. Combine Ingredients:
Once the tomatoes and bell peppers are cooked, reduce the heat to medium. Add 2 teaspoons of the ginger/garlic paste to the saucepot and cook for an additional 2 minutes, stirring frequently.

  4. Blend and Strain the Sauce:
Reduce the heat to low, stir in the garam masala and salt, and continue to cook for 5 to 6 minutes, or until the sauce thickens to a consistency of a thick puree. Remove the sauce from heat and strain it to remove any solids. Return the strained sauce to the pot.

  5. Finish the Sauce:
Bring the strained sauce back to a boil. Then, reduce the heat to low and stir in the unsalted butter, heavy cream, and honey. Simmer gently until the sauce is well combined and ready to serve.

Serving Suggestions:

  • Serve Hot:
Serve the Chicken Tikka Masala hot, garnished with fresh cilantro if desired. Pair it with warm naan bread or fluffy basmati rice for a complete meal.

  • Accompaniments:
A side of cucumber raita or a fresh salad can add a refreshing contrast to the rich and spicy flavors of the masala.
