Instructions:

  1. Wash and Prepare the Dal:

    • Begin by thoroughly washing the Toor Dal under running water. Drain any excess water.
  2. Cook the Dal:

    • In a pressure cooker, combine the washed dal with crushed garlic, grated ginger, turmeric powder, red chili powder, chopped green chilies, chopped tomato, salt, and 2 cups of water.
    • Close the lid of the pressure cooker and cook the dal on medium heat for about 2 whistles.
    • After 2 whistles, reduce the heat to low and cook for another 3 minutes.
    • Turn off the heat and allow the pressure to release naturally.
  3. Whisk the Dal:

    • Once the pressure has released, open the cooker.
    • Whisk the cooked dal to make it smooth and creamy. If the dal appears too thick, you can add a little water to reach your desired consistency.
  4. Add Tamarind Water:

    • Pour in the tamarind water and bring the dal to a brisk boil over medium heat.
    • Once it begins to boil, reduce the heat and let the dal simmer for a few minutes, allowing the flavors to meld together.
  5. Prepare the Seasoning (Tadka):

    • In a small pan (tadka pan), heat 1 teaspoon of oil on medium heat.
    • Add the mustard seeds and cumin seeds to the hot oil and allow them to crackle.
    • Once the seeds start popping, add the sliced garlic and sauté until it turns golden brown.
    • Add the dry red chilies and curry leaves, and fry for an additional 10-15 seconds to release their aroma.
  6. Combine and Simmer:

    • Pour the prepared seasoning (tadka) over the simmering dal.
    • Stir well and let the dal simmer for another 4-5 minutes on low heat to infuse the flavors.
  7. Garnish and Serve:

    • Taste the dal and adjust the salt as per your preference.
    • Garnish with fresh chopped coriander leaves for a pop of color and flavor.
