Ayam Goreng Ungkep (Indonesian Fried Chicken) – MSG-Free Recipe
Ingredients:
- 8 small pieces of free-range chicken
- 10 tablespoons cooking oil
- 250 ml water
For the Herbs:
- 1 stalk lemongrass
- 1 pandan leaf
- 3 bay leaves
- 4 kaffir lime leaves
For the Spice Paste:
- 1 stalk lemongrass (white part only)
- 3 large shallots
- 1 large garlic clove
- 1 tablespoon coriander seeds
- 2 cm turmeric
- 4 cm galangal
- Salt and sugar to taste

Preparation:
- Rub the chicken pieces with lime juice and let them marinate for about 20 minutes.

Make the Spice Paste:
- Chop the lemongrass, shallots, garlic, turmeric, and galangal into smaller pieces for easier blending.
- Using a mortar and pestle, grind the chopped ingredients along with the coriander seeds into a smooth paste. If you prefer a more convenient method, you can use a food processor.

Cooking:
- Heat the cooking oil in a large pan over medium heat. Tie the pandan leaf, bay leaves, and kaffir lime leaves together with kitchen twine to make them easier to remove later.
- Sauté the tied herb bundle in the hot oil until fragrant.
- Add the spice paste to the pan and cook until the paste is well-cooked and aromatic. Season with salt and sugar to taste.

Combine and Simmer:
- Reduce the heat to low. Add the chicken pieces to the pan, making sure to coat them well with the spice mixture. Allow the chicken to marinate in the spices for a few minutes.
- After about 3 minutes, pour in the water and bring it to a boil. Adjust the seasoning if needed.
- Cover the pan and let the chicken simmer on low to medium heat until the water has evaporated and the chicken is cooked through. Stir occasionally to ensure the chicken cooks evenly.

- Once the water has evaporated, you can either proceed to fry the chicken immediately or store it in the refrigerator for later use.
- If frying immediately, heat additional oil in a separate pan and fry the chicken pieces until golden brown and crispy.
Notes:
- This dish is traditionally enjoyed with steamed rice and a side of fresh vegetables or sambal.
- For a spicier kick, feel free to add chili peppers to the spice paste.
