Semur Daging Sapi Recipe
Ingredients:
- 1 kg beef (preferably cut into cubes for stew)
- 8 cloves garlic
- 8 shallots
- 5 candlenuts
- 1 teaspoon black pepper
- 1 piece ginger (about 2 inches)
- 1 piece turmeric (about 2 inches)
- 1 piece lemongrass (bruised)
- 1 bay leaf
- 1 piece galangal (about 2 inches)
- 2 kaffir lime leaves
- 3 pieces palm sugar (or to taste)
- Sweet soy sauce (to taste)
- A pinch of seasoning (optional)
- 1 teaspoon salt
- Additional sweet soy sauce (to taste)
Instructions:
-
Prepare the Beef: Begin by washing the beef cubes thoroughly. If possible, request that the butcher cut the meat into pieces suitable for a stew. This ensures the meat cooks evenly and absorbs flavors well.
-
Blend the Spices: In a food processor or mortar and pestle, blend together the garlic, shallots, candlenuts, ginger, turmeric, and black pepper until a smooth paste forms. This spice paste is the foundation of the dish’s rich flavor.
-
Sauté the Spice Paste: Heat a generous amount of oil in a large skillet or wok over medium heat. Add the blended spice paste and sauté, stirring frequently, until it becomes aromatic and starts to turn golden brown. This step is crucial as it releases the essential oils and flavors from the spices.
-
Add the Meat: Once the spice paste is aromatic, add the beef cubes to the skillet. Stir to coat the meat evenly with the spice paste. Cook for a few minutes, allowing the beef to sear and begin to brown slightly.
-
Simmer the Stew: Pour enough water into the skillet to completely submerge the beef. Bring the mixture to a boil, then reduce the heat to low. Add the lemongrass, bay leaf, galangal, and kaffir lime leaves. Cover the skillet and let it simmer gently. Cook until the beef is tender and fully cooked, which should take approximately 1 to 2 hours depending on the size of the beef pieces.
-
Add Sweetness and Seasoning: Once the beef is tender, stir in the palm sugar and adjust the seasoning with salt and additional sweet soy sauce to taste. If you prefer a richer sweetness, you can add more palm sugar or sweet soy sauce. Taste the stew and adjust the seasoning as needed.
-
Serve: When the beef is tender and the sauce has thickened to your liking, remove the stew from heat. Serve hot with steamed rice or your preferred side dishes.
