Homemade Chicken Noodle (Mie Ayam)
Ingredients:

Chicken Mixture:
- 1 chicken breast
- Sweet soy sauce (kecap manis)
- Soy sauce
- Salt
- Sugar

Noodles and Greens:
- 1 package of curly noodles (rebus)
- Fresh green mustard leaves (rebus)
- Scallions (finely chopped)

Chicken Seasoning:
- 4 cloves of shallots
- 3 cloves of garlic
- 1 candlenut
- Turmeric
- Ginger
- Pepper
- Salt
- Galangal (as needed)
- 1 stalk lemongrass
- 1 bay leaf

Broth Seasoning:
- Water (as needed)
- 2 cloves of garlic (crushed)
- Chicken broth powder
- Ground pepper

Chicken Oil:
- Chicken skin
- 2 cloves of garlic
- Cooking oil (as needed)
Instructions:

Preparing the Chicken:
- Boil the chicken breast until half-cooked. Remove from the water and shred the chicken into small pieces.

Making the Chicken Seasoning:
- Grind all the chicken seasoning ingredients, except for the galangal, bay leaf, and lemongrass, until smooth.
- Sauté the ground seasoning until fragrant. Add the galangal, bay leaf, and lemongrass, then stir well.
- Add salt, sugar, and a generous amount of water to the sautéed mixture.
- Add the shredded chicken and stir until well mixed. Pour in some sweet soy sauce and adjust the seasoning to taste. Set aside.

Preparing the Chicken Oil:
- Cook the chicken skin until crispy in a pan with a little oil.
- Add the crushed garlic and continue cooking until the garlic turns golden brown. Set aside the seasoned oil.

Making the Broth:
- Boil water in a pot and add the crushed garlic, chicken broth powder, and ground pepper. Adjust the seasoning to taste and let it simmer until well cooked.

Assembling the Dish:
- Place the seasoned chicken oil in a bowl, then add the cooked noodles and boiled mustard greens.
- Top with the seasoned shredded chicken and pour over the hot broth.
- Garnish with chopped scallions, additional sweet soy sauce, and soy sauce to taste.
