Kari Ayam: Indonesian Chicken Curry Recipe

Ingredients:

  • 1 kg chicken, cut into pieces
  • 3 cloves garlic, crushed
  • Spice Paste:
    • 1 tablespoon roasted coriander seeds
    • 1/2 tablespoon salt
    • 3 cloves garlic
    • 4 shallots
    • 1/2-inch piece turmeric
    • 5 candlenuts
  • Additional Ingredients:
    • 1 sachet instant chicken curry powder (e.g., Indofood brand)
    • 1 tomato, sliced
    • 2 stalks lemongrass, bruised
    • 1 pandan leaf
    • 2 tablespoons granulated sugar
    • 1 small sachet of coconut milk (e.g., Kara brand)
    • 1 liter water
  • For Garnish:
    • Fried shallots

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly and boil them in water with crushed garlic until fully cooked. Remove from heat and set aside.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the roasted coriander seeds, salt, garlic, shallots, turmeric, and candlenuts. Blend until a smooth paste forms.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant.

    • Gently add the boiled chicken pieces to the curry mixture. Pour in 1 liter of water, ensuring the chicken is well covered. Stir to mix everything thoroughly.
  7. Cook and Adjust Seasoning:

    • Allow the curry to simmer, stirring occasionally, until the flavors meld and the sauce thickens. Taste and adjust seasoning as needed.
  8. Garnish and Serve:

    • Once the curry is well-seasoned and aromatic, sprinkle with fried shallots for extra flavor. Serve hot with steamed rice or bread.
