Rawon Sapi Recipe: A Traditional Indonesian Beef Soup

Ingredients:

  • 300 grams lean beef, cut into bite-sized pieces
  • 2 segments galangal, crushed
  • 5 bay leaves
  • 3 kaffir lime leaves
  • 2 stalks lemongrass, crushed
  • 3 liters water for boiling
  • 2 stalks green onions, chopped coarsely

For the Spice Paste:

  • 1 teaspoon black peppercorns
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon cumin seeds
  • 10 shallots
  • 8 garlic cloves
  • 2 segments turmeric
  • 2 segments ginger
  • 4 candlenuts, toasted
  • 5 red curly chilies (adjust according to taste)
  • 1 segment kencur (optional)
  • Cooking oil for sautéing
  • 1 tablespoon tamarind water

For Garnishing:

  • Bean sprouts, to taste
  • 1 large tomato, diced
  • 1 stalk green onion, finely chopped
  • Salted eggs, to taste
  • Crackers, to taste
  • Fried shallots, to taste

Instructions:

  1. Prepare the Beef:

    • Cut the beef into bite-sized pieces and rinse thoroughly.
    • Bring 1 liter of water to a boil in a large pot. Add the beef and cook over high heat for about 10 minutes.
    • Remove the beef, discard the boiling water, and rinse both the beef and the pot to remove any residual fat.
  2. Cook the Beef:

    • In the cleaned pot, bring 2 liters of fresh water to a boil. Once boiling, reduce the heat and add the beef. Simmer until the beef is tender, approximately 45 to 60 minutes.
  3. Prepare the Spice Paste:

    • While the beef is simmering, grind the spices for the paste along with the kencur (if using) into a smooth paste.
    • Heat some oil in a pan, and sauté the spice paste along with the lemongrass, galangal, bay leaves, and kaffir lime leaves until fragrant. Season with salt and sugar to taste.
  4. Combine and Simmer:

    • Once the beef is tender, add the sautéed spice paste, chopped green onions, and tamarind water to the pot. Adjust seasoning as needed. Continue to simmer until all the flavors are well combined.
  5. Serve:

    • Ladle the hot rawon into bowls and garnish with bean sprouts, diced tomato, finely chopped green onions, salted eggs, crackers, and fried shallots.
