Spicy Rica-Rica Chicken Recipe
Ingredients:
- 1 whole kampung chicken, cut into small pieces
- 1 red tomato, chopped
- 2 stalks lemongrass, bruised
- 2 slices galangal, bruised
- 5 kaffir lime leaves
- 1 tablespoon granulated sugar
- 1-2 teaspoons chicken or mushroom bouillon powder
- Salt and pepper to taste
- Optional: Sweet soy sauce (kecap manis)
For the Spice Paste:
- 10 shallots
- 8 cloves garlic
- 10 large red chilies
- 5 bird’s eye chilies
- 2 teaspoons toasted coriander seeds
- 1 teaspoon grated ginger

Prepare the Chicken:
- In a large pot, bring 2 liters of water to a boil. Add the chicken pieces and cook until the chicken is halfway done. Remove the chicken from the pot and set aside. Reserve 750 mL of the chicken broth; you can freeze the remaining broth for future use.

Make the Spice Paste:
- Using a food processor or mortar and pestle, blend the shallots, garlic, red chilies, bird’s eye chilies, toasted coriander seeds, and grated ginger into a smooth paste.

Sauté the Spice Paste:
- Heat a generous amount of oil in a large pan or Dutch oven over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.

Add Aromatics:
- Add the bruised lemongrass, galangal slices, and kaffir lime leaves to the pan. Stir well to combine with the spice paste.

Cook the Chicken:
- Add the chicken pieces back into the pan and mix thoroughly with the spice paste and aromatics. Cook for a few minutes, allowing the flavors to meld.

Simmer with Broth:
- Pour in the reserved chicken broth. Season with granulated sugar, salt, and pepper to taste. If desired, add a splash of sweet soy sauce (kecap manis) for extra flavor. Bring to a boil, then reduce the heat and let it simmer until the sauce has thickened and the chicken is tender.

Adjust Seasoning:
- Taste and adjust the seasoning as needed. Add more salt, pepper, or sugar if desired.

- Serve the spicy rica-rica chicken hot, accompanied by steamed white rice and a sprinkle of fried shallots.
