Tongseng Sapi is a flavorful Indonesian beef stew that combines tender chunks of beef with a rich, spiced coconut broth, making it a delightful and hearty dish. Here’s a step-by-step guide to recreating this traditional favorite in your own kitchen.

Ingredients:

  • Beef: 400 grams, cut into small cubes
  • Ground Black Pepper: 1 teaspoon
  • Salt: 3 teaspoons
  • Granulated Sugar: 1 tablespoon
  • Cooking Oil: 2 tablespoons, for sautéing
  • Shallots: 3, thinly sliced
  • Sweet Soy Sauce (Kecap Manis): 3 tablespoons
  • Cabbage: 1/4 head, chopped into pieces
  • Bird’s Eye Chilies (Cabe Rawit Hijau): 5, whole
  • Bay Leaves: 2
  • Lemongrass: 2 stalks, bruised
  • Galangal: 1 cm, bruised
  • Coconut Milk: 1 cup
  • Water: As needed
For the Spice Paste:
  • Garlic: 4 cloves
  • Shallots: 6
  • Roasted Candlenuts: 4
  • Turmeric: 3 cm, roasted
  • Ginger: 2 cm
  • Roasted Coriander: 1 teaspoon
For Garnishing:
  • Fried Shallots: 3 tablespoons
  • Spring Onions: 2 stalks, finely sliced
  • Tomatoes: 2, cut into pieces

Instructions:

  1. Prepare the Beef: Begin by boiling the beef until tender. Once cooked, cut the beef into small cubes according to your preference.

  2. Sauté the Aromatics: Heat 2 tablespoons of oil in a pan over medium heat. Sauté the sliced shallots, bay leaves, bruised lemongrass, and bruised galangal until fragrant.
