Experience the tantalizing flavors of Indonesian cuisine with this delightful recipe for Ayam Sisit Sambal Matah. This dish combines tender shredded chicken with a zesty sambal matah—a raw Balinese sambal that’s both spicy and aromatic. It’s perfect when served with warm rice and crispy crackers.

Ingredients:

  • 1/2 kg chicken (ayam)
  • 2 stalks lemongrass (serai)
  • 12 shallots (bawang merah)
  • 8-10 bird’s eye chilies (cabai rawit)
  • 2 tablespoons coconut oil (minyak kelapa)
  • A small amount of shrimp paste (terasi)
  • 1/2 teaspoon salt (garam)
  • 1 lime (jeruk limo)

Instructions:

  1. Prepare the Chicken:

    • Heat oil in a pan and fry the chicken pieces until crispy and fully cooked. Once done, remove from heat and let cool. Shred the chicken into small pieces.
  2. Make the Sambal Matah:

    • Thinly slice the shallots, lemongrass, and bird’s eye chilies.
    • In a bowl, combine the sliced ingredients with shrimp paste, salt, and coconut oil.
    • Squeeze in the juice of one lime and mix everything thoroughly. Use your hands to gently mix and mash the ingredients to ensure an even distribution of flavors.
  3. Combine Chicken and Sambal:

    • Add the shredded chicken to the sambal mixture. Toss well with your hands to ensure the chicken is evenly coated with the sambal.
  4. Serve:

    • Transfer the sambal-coated chicken to a serving plate. Serve warm with steamed rice and crispy white crackers.
