Bali Special Chicken Sisit

Ingredients:

  • 300 grams chicken breast fillet
  • 3 cloves garlic
  • 5 curly red chilies (adjust to taste)
  • 5 kaffir lime leaves
  • A thumb-sized piece of roasted shrimp paste (terasi), to taste
  • Salt, sugar, and seasoning to taste

Instructions:

  1. Cook the Chicken: Boil the chicken breast until cooked through. Reserve some of the broth. Once cooked, shred the chicken breast thinly for easier mixing.

  2. Prepare the Spice Paste: Blend or pound together garlic, red chilies, and roasted shrimp paste until smooth.

  3. Mix and Sauté: Combine the shredded chicken with the spice paste. Mix well until evenly coated.

  4. Sauté with Flavor: Heat some oil in a pan. Sauté the chicken mixture until fragrant and the spices are cooked through. Add a bit of the reserved broth from boiling the chicken, then add kaffir lime leaves, salt, sugar, and seasoning. Adjust the seasoning to taste.

  5. Simmer and Serve: Allow the mixture to simmer until the liquid reduces and the flavors meld together. The dish should have a dry, flavorful consistency.

  6. Serve: Once done, Ayam Sisit is ready to be served hot. Enjoy this delicious Balinese dish with steamed rice or as part of a larger Indonesian meal.

This recipe for Ayam Sisit captures the essence of Balinese cuisine with its vibrant flavors and aromatic spices, making it a delightful addition to any dining experience.
