Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 ripe banana
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup chopped pecans

Instructions:

Step Description
1. Preheat oven to 350ºF (175ºC).
2. Lightly spoon flour into dry measuring cups, and level with a knife.
3. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
4. In a separate medium bowl, mash the banana until smooth. Add oil, vanilla extract, and egg, and stir until well combined.
5. Gradually add the banana mixture to the dry ingredients, stirring until a sticky dough forms. Fold in the chopped pecans.
6. Turn the dough out onto a lightly floured surface. With floured hands, shape the dough into 2 (8-inch-long) rolls.
7. Place the rolls on a baking sheet coated with cooking spray, and flatten them to 1/2-inch thickness.
8. Bake in the preheated oven for 23 minutes, or until lightly golden.
9. Remove the rolls from the baking sheet and let them cool for 10 minutes on a wire rack.
10. Using a sharp knife, cut each roll diagonally into 12 (1/2-inch) slices.
11. Place the slices, cut sides down, back onto the baking sheet.
12. Reduce the oven temperature to 250ºF (120ºC), and bake the cookies for an additional 15 minutes.
13. Flip the cookies over and bake for another 15 minutes, or until they are slightly soft in the center but firm around the edges.
14. Once baked, remove the cookies from the baking sheet and let them cool completely on wire racks.
