Instructions:
Step | Description |
---|---|
1. | Preheat oven to 350ºF (175ºC). |
2. | Lightly spoon flour into dry measuring cups, and level with a knife. |
3. | In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well. |
4. | In a separate medium bowl, mash the banana until smooth. Add oil, vanilla extract, and egg, and stir until well combined. |
5. | Gradually add the banana mixture to the dry ingredients, stirring until a sticky dough forms. Fold in the chopped pecans. |
6. | Turn the dough out onto a lightly floured surface. With floured hands, shape the dough into 2 (8-inch-long) rolls. |
7. | Place the rolls on a baking sheet coated with cooking spray, and flatten them to 1/2-inch thickness. |
8. | Bake in the preheated oven for 23 minutes, or until lightly golden. |
9. | Remove the rolls from the baking sheet and let them cool for 10 minutes on a wire rack. |
10. | Using a sharp knife, cut each roll diagonally into 12 (1/2-inch) slices. |
11. | Place the slices, cut sides down, back onto the baking sheet. |
12. | Reduce the oven temperature to 250ºF (120ºC), and bake the cookies for an additional 15 minutes. |
13. | Flip the cookies over and bake for another 15 minutes, or until they are slightly soft in the center but firm around the edges. |
14. | Once baked, remove the cookies from the baking sheet and let them cool completely on wire racks. |
