Banarasi Style Tomato Chaat (Tamatar Chaat Banarasi Style)

Ingredients:

  • 2 boiled potatoes, mashed
  • 1 tsp red chili powder
  • 4 ripe tomatoes
  • 1 tsp black salt (or rock salt)
  • 1 tsp cumin powder
  • 1 tsp black pepper powder
  • 2 tbsp tomato ketchup
  • 1 tbsp sugar
  • 1 tsp garam masala powder
  • 1 onion, finely chopped
  • 3 green chillies, chopped
  • Fresh coriander leaves, chopped
  • Puffed rice (namkeen), as needed
  • Oil, as required for frying

Cook Time: 25 minutes

Instructions:

  1. Begin by placing the potatoes in a pressure cooker with enough water and a pinch of salt. Close the lid and cook for 3 whistles. Once cooked, peel and mash the potatoes in a bowl.
  2. To the mashed potatoes, add cumin powder, red chili powder, garam masala powder, black pepper, and black salt. Mix well to combine.
  3. Cut the tops off the tomatoes and carefully scoop out the pulp using a spoon. Fill each tomato with the prepared potato masala.
  4. Heat 2-3 tablespoons of oil in a pan. Once the oil is hot, carefully place the stuffed tomatoes with the masala-filled side down in the pan. Cover the pan and cook for 10-15 minutes until the tomatoes are tender and slightly cooked.
  5. Once cooked, turn off the heat and transfer the tomatoes to a mixer grinder. Grind them to a smooth paste.
  6. In a separate pan, heat a bit more oil and add the tomato paste, salt, sugar, and tomato ketchup. Cook for 10-12 minutes until it thickens and becomes fragrant.
  7. Transfer the cooked mixture into a bowl and garnish with finely chopped onion, green chillies, fresh coriander leaves, and puffed rice.
  8. Serve your Banarasi Style Tomato Chaat as a savory evening snack, paired with masala tea.
