Ingredients

  • 2 red capsicums
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 1/3 cup dry white wine
  • 2 1/2 tablespoons fresh basil, finely chopped
  • 2 limes

Instructions

  1. Prepare the Capsicums:

    • Cut the red capsicums into quarters, removing the membrane and seeds.
    • Grill the capsicums, skin side up, until the skin blackens and blisters. Peel the skins from them.
    • Finely chop the grilled capsicums.
  2. Cook the Capsicum Mixture:

    • Heat olive oil in a pan. Stir in the chopped capsicums and brown sugar.
    • Cook over low heat, covered, for about 45 minutes or until the capsicums are soft. Stir occasionally.
    • Stir in the dry white wine and bring the mixture to a boil.
    • Simmer uncovered for about 15 minutes or until the mixture thickens.
    • Remove from heat, strain, and cool.
    • Stir in the finely chopped basil.
  3. Prepare the Toast Squares:

    • Remove the crusts from the bread and cut it into 2 1/2cm squares.
    • Place the bread squares on an ungreased oven tray and bake in a moderate oven for about 10 minutes or until lightly browned. Allow to cool.
  4. Assemble the Red Capsicum Toasts:

    • Spoon the prepared capsicum mixture onto the toast squares.
    • Top each toast square with lime wedges.
  5. Serve and Enjoy:

    • These Red Capsicum Toasts with Basil-Lime Chutney are not only a delightful finger food but can also serve as a unique ‘chutney’ for cold meats.
    • The tangy lime flavor adds a refreshing touch to the dish, making it a hit at any gathering.
