Instructions
-
Cook the Rice
Begin by cooking the rice. Since Basmati and red rice have different cooking times, you will need to cook them separately. Bring two pots of water to a boil. In one pot, add the red rice and cook for approximately 30 minutes. In the other pot, add the Basmati rice and cook for about 15 minutes (or follow the instructions on the individual packages). Once cooked, drain both types of rice and set them aside to cool. -
Prepare the Vegetables and Prawns
While the rice is cooking, wash and trim the zucchinis, then cut them into small cubes. Wash the radicchio and slice it thinly into strips. For the prawns, peel and devein them by removing the heads and shells. -
Cook the Bacon and Combine
Heat a small amount of olive oil in a pan and sauté the sweet bacon cubes until crispy and golden. Once cooked, remove the pan from the heat and add the sliced radicchio, letting the residual heat soften the greens slightly. -
Assemble the Salad
Allow the rice to cool completely. Once the rice is cool, combine it in a large bowl with the prepared zucchinis, prawns, and bacon-radicchio mixture. Gently toss the ingredients together, making sure the rice is well-mixed with the vegetables and bacon. -
Season and Serve
Drizzle with extra virgin olive oil, and season with salt and black pepper to taste. Toss everything together one last time. The dish can be served immediately or chilled for an hour before serving to allow the flavors to meld.
Enjoy this fresh and vibrant Basmati and Red Rice Salad with Sweet Bacon Cubes as a delightful main dish perfect for any occasion!
