Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/3 cups mixed berries (such as raspberries and strawberries), fresh or frozen

Instructions:

  1. Preheat Oven: Begin by positioning a rack in the center of your oven and preheating it to 400°F (200°C).

  2. Prepare Muffin Cups: Lightly butter twelve 2 1/2-inch muffin cups, or alternatively, place paper muffin cups in the muffin tin.

  3. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt to combine. Make a well in the center of the dry ingredients.

  4. Mix Wet Ingredients: In another medium bowl, whisk together the milk, vegetable oil, and eggs until well combined.

  5. Combine Wet and Dry Ingredients: Pour the wet ingredients into the well of the dry ingredients. Stir just until blended, being careful not to overmix.

  6. Fold in Berries: Gently fold in the mixed berries until evenly distributed throughout the batter.

  7. Fill Muffin Cups: Spoon equal amounts of the batter into the prepared muffin cups, filling them about three-fourths full.

  8. Bake: Place the muffin tin in the preheated oven and bake until a toothpick inserted into the center of a muffin comes out clean, approximately 15 to 20 minutes.

  9. Cool: Allow the muffins to cool in the pan for 5 minutes.

  10. Serve: After cooling slightly, remove the muffins from the pan and serve warm, or transfer them to a wire rack to cool completely.

Enjoy these delicious Mixed Berry Muffins as a delightful addition to your breakfast, brunch, or as a sweet treat any time of the day! 🍓🧁
