Instructions

  1. Prepare the Broccoli and Garlic:

    • Begin by heating 1 teaspoon of olive oil in a medium-sized wok or pan over medium heat.
    • Add the minced garlic and broccoli florets to the pan. Season with a pinch of salt.
    • Sauté for about 5–7 minutes or until the broccoli becomes tender, slightly golden, and aromatic.
    • Remove from heat and allow it to cool.
  2. Combine Ingredients:

    • Once the broccoli mixture has cooled, transfer it to a food processor.
    • Add in the instant oats, rolled oats, paneer, black olives, whole peppercorns, cumin powder, walnuts, and a pinch of salt.
    • Blend the mixture on medium speed until it forms a coarse, slightly chunky paste.
  3. Adjust Texture and Seasoning:

    • Ensure all ingredients, including the raw oats and peppercorns, are well combined but retain a bit of texture.
    • Taste the spread and adjust salt or spices as desired.
  4. Serve and Enjoy:

    • Your Oat, Olive, and Broccoli Sandwich Spread is now ready!
    • Spread it on bread for sandwiches, roll it in a wrap, or use as a creative topping for pasta.

This spread is a fantastic choice for meal prep, as it stays fresh in the refrigerator for up to five days. Enjoy the earthy, creamy flavors that bring a twist to traditional spreads!
