Ingredients:

2/3 cup Butter
1 Egg yolk
3-4 tablespoons Ice water

Instructions:

  1. Prepare the Dough:

    • In a large bowl, combine the all-purpose flour and salt, mixing well.
    • Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs.
    • In a small bowl, beat the egg yolk with 3 tablespoons of ice water.
    • Sprinkle the egg mixture over the flour mixture, one tablespoon at a time, tossing with a fork to blend lightly but evenly.
    • Add up to 1 tablespoon of water, if necessary, until the dough begins to form a ball.
    • Gently knead the dough 2 or 3 times, then flatten it into a disk shape.
  2. Single Crust Preparation:

    • On a lightly floured surface, roll out half of the dough into an 11 to 12-inch circle.
    • Fit the rolled-out dough into a 9-inch pie plate, trimming any excess and leaving a 1-inch overhang.
    • Dampen the underside of the overhang with water, then turn it under and flute the edges or make a decorative edging as desired.
    • Place the prepared crust in the freezer for 10 minutes before filling.
  3. Double Crust Preparation:

    • Roll out the dough as instructed for the single crust pie.
    • Fit one rolled-out dough into the pie plate and trim any excess.
    • Roll out the remaining dough and fit it over the top of the pie.
    • Trim, leaving a 1-inch overhang, then dampen the edges of the pastry with water and press them together or turn them under. Flute the edge and cut vents for steam in the center of the top crust.
  4. Prebaked Pie Shell (Optional):

    • Follow the instructions for preparing the Jiffy Butter Crust.
    • Roll out half of the dough and fit it into a 9-inch pie plate.
    • Prepare the single crust as directed, then place it in the freezer for 10 minutes.
