Instructions:
- Start by heating oil in a large skillet or Dutch oven over medium-high heat.
- Add the boneless, skinless chicken breast to the skillet and cook until fully cooked and no longer pink in the center, approximately 5-7 minutes per side.
- Once the chicken is cooked through, remove it from the skillet and set it aside.
- In the same skillet, add the turkey sausage and cook until browned, breaking it apart with a spoon as it cooks, approximately 5-7 minutes.
- Next, add the shrimp to the skillet and cook until they are almost pink, about 2-3 minutes.
- Season the meats and shrimp with chili pepper and black pepper, according to your taste preferences.
- Chop the red and green bell peppers into small pieces and add them to the skillet. Cook for an additional 2-3 minutes, or until the peppers are slightly softened.
- Stir in the Zatarain’s jambalaya mix and creole rice mix, ensuring that they are well combined with the meats and vegetables.
- Add the stewed tomatoes to the skillet, mixing them in with the other ingredients.
- Follow the directions on the back of the Zatarain’s jambalaya mix box for the appropriate amount of water to add.
- Cover the skillet and allow the jambalaya to simmer for about 20-25 minutes, or until the rice is tender and has absorbed all of the liquid, stirring occasionally to prevent sticking.
- Once the rice is cooked through, remove the skillet from the heat and let it sit, covered, for 5 minutes before serving.
- Serve the jambalaya hot, garnished with freshly chopped parsley or green onions if desired.
