Soy Sauce 1 tablespoon
Fish Sauce 1 tablespoon
Oyster Sauce 1 tablespoon
Red Chilli Sauce 1 tablespoon
White Wine Vinegar 1 teaspoon
Sesame (Gingelly) Oil 3 tablespoons
Salt As needed
Spring Onion Greens (for garnish) A handful (chopped)

Instructions

  1. Marinate the Chicken
    Begin by washing and cleaning the boneless chicken. Slice the chicken into thin strips for quick and even cooking. In a bowl, combine the chicken with 1 teaspoon of crushed garlic, 1 teaspoon of crushed ginger, black pepper powder, and a pinch of salt. Mix everything thoroughly and let it marinate for about 30 minutes to allow the flavors to infuse the chicken.

  2. Prepare the Noodles
    Cook the Hakka noodles according to the instructions on the package. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and prevent them from sticking.   3. Stir-Fry the Vegetables and Chicken

    In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, red chili sauce, and white wine vinegar. Stir well to combine all the ingredients into a smooth sauce mixture.

    Once the vegetables are cooked, add the cooked noodles to the pan along with the stir-fried chicken. Pour the sauce mixture over the noodles and toss everything gently but thoroughly to coat the noodles, chicken, and vegetables in the rich sauce.
