Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 200°C (390°F) in static mode, ensuring it’s ready for baking the puff pastry to a golden perfection.

  2. Prepare the Tomatoes: Wash and slice the datterini cherry tomatoes into quarters. These sweet, juicy tomatoes will be the base of your delightful puff pastry bites, offering a burst of flavor.

  3. Prepare the Puff Pastry: Lay the puff pastry flat on a baking sheet, keeping it on the parchment paper it’s wrapped in. Using a 9 cm (approximately 3.5 inches) round cookie cutter, cut out 8 discs of pastry. Carefully remove the excess pastry from around the discs, saving it for later use if desired.

  4. Add the Tomatoes: Spoon a tablespoon of the sliced tomatoes onto each pastry disc. Drizzle a small amount of extra virgin olive oil over the tomatoes, followed by a pinch of fine salt. This will help elevate the flavors, giving each bite a subtle richness.

  5. Bake the Pastry: Place the prepared puff pastry discs in the preheated oven and bake for 10 minutes. The pastry should begin to puff up and turn golden at the edges, signaling it’s time for the next step.

  6. Add Mozzarella: Once the pastry has become lightly golden, remove the puff pastry bites from the oven. Top each one with a teaspoon of cubed mozzarella, placing the cheese on top of the tomatoes. Return the bites to the oven and bake for an additional 2-3 minutes, just long enough for the mozzarella to melt and become slightly bubbly.

  7. Finish and Serve: After removing the pastries from the oven, sprinkle fresh basil leaves over the top. Gently tear the basil by hand to release its natural aroma and flavors. The fresh basil will add a fragrant and slightly peppery touch to the savory dish.

Serve these Caprese puff pastry bites warm as a light appetizer or snack. The combination of flaky pastry, juicy tomatoes, creamy mozzarella, and aromatic basil makes for a delightful bite-sized treat that’s sure to impress your guests. Enjoy!
