Instructions:
To create these delightful Mini Apple and Almond Tatin, you first need to prepare the buttery caramel. Begin by placing the sugar into a saucepan made of steel or copper, ideally with a thick bottom to ensure even heating. After about 5 minutes, the sugar will melt and turn into a beautiful golden caramel. Once this happens, remove the pan from the heat and add the butter, ensuring it’s at room temperature. Stir the mixture well with a wooden spoon until fully combined.
Immediately pour the buttery caramel into 4 small tart pans (approximately 10 cm in diameter). Gently tilt each pan to evenly distribute the caramel over the bottom.
Next, wash and dry the Fuji apples thoroughly. Cut them in half, removing the cores, and slice them into thin pieces.
Now, it’s time to assemble the Mini Apple Tatin. Start by arranging a layer of apple slices on top of the caramel in each tart pan, making sure to cover the entire surface. Sprinkle a generous amount of toasted sliced almonds over the apples for added flavor and texture.
Take the puff pastry sheet and, using a round cutter slightly larger than the diameter of your tart pans (an 11 cm cutter works perfectly), cut out 4 circles of pastry. Place each puff pastry circle over the apple and almond layer in the pans. Fold the edges of the pastry inward, pressing them gently around the apples. Using the tip of a knife, prick the surface of the pastry to allow steam to escape during baking.
Place the tart pans on a baking tray and transfer them to a preheated static oven at 180°C (350°F). Bake for approximately 35 minutes, or until the puff pastry turns golden and crispy.
Once baked, remove the pans from the oven and let them cool for about 15 minutes. This resting time will allow the caramel to settle and make it easier to remove from the pans. Carefully tilt each pan to let any excess liquid drain away, being cautious not to burn yourself.
To serve, carefully invert the mini tatins onto plates. These delectable treats are perfect on their own or served with a scoop of vanilla ice cream for an extra touch of indulgence.
