Nesquik Tartlets with Caramelized Pears

Nesquik Squeeze to taste

Instructions

1. Prepare the Nesquik Shortcrust Pastry
  • Start by preparing the Nesquik shortcrust pastry using the “sandblasting” method. In the bowl of a food processor, combine the all-purpose flour and Nesquik powder. Pulse a few times until well mixed.

  • Add the powdered sugar and continue processing until the mixture resembles fine breadcrumbs.

  • Transfer the mixture to a large mixing bowl. Add the butter, which should be cold and cut into small cubes, and the egg. Quickly work the dough together until it forms a smooth, non-sticky dough. If the dough feels too soft, refrigerate it for about 30 minutes.

  • Once rested, place the dough onto a lightly floured surface and roll it out to a thickness of about 3-4 mm. Use a knife or pastry cutter to cut squares measuring around 10×10 cm.

2. Shape and Blind-Bake the Pastry
  • Grease and flour your tartlet pans (with a base diameter of 10 cm and a height of 2 cm) to prevent the dough from sticking.

  • Gently press the squares of dough into the tartlet pans, trimming any excess from the edges. Use the tines of a fork to prick the bottom of each tart base lightly to prevent it from puffing up during baking.

  • Now, proceed with blind baking. Place a piece of parchment paper in each tart shell and fill them with dried beans or pie weights to keep the pastry flat.

  • Bake the tartlets in a preheated static oven at 180°C (or 160°C in a fan oven) for 20-25 minutes. Once done, remove them from the oven and carefully lift the parchment and beans. Let the tartlets cool completely in the pans.

3. Prepare the Pear Filling
  • While the tart shells cool, prepare the pear filling. Peel and dice 5 pears into coarse chunks.

  • In a non-stick pan, melt a small knob of butter over medium heat. Add the pear chunks and stir in 150g of granulated sugar and half a teaspoon of ground cinnamon.

  • Cook the pears for 10-15 minutes, stirring occasionally, until they soften and break down. You want the mixture to become a thick, chunky sauce with very little liquid. Let it cool.

  • Transfer the cooled pear mixture into a blender or use an immersion blender to purée it into a smooth, creamy consistency. Set this aside for later use.

4. Caramelize the Pears for Decoration
  • Next, prepare the caramelized pears for decoration. Slice the remaining pears thinly.

  • In another non-stick pan, melt the remaining butter and add 50g of granulated sugar, half a teaspoon of cinnamon, and the juice of one lemon. Stir gently to combine.

  • Add the sliced pears and cook on moderate heat for about 10 minutes, turning occasionally, until the pears are lightly caramelized but still hold their shape. Remove from heat and let them cool.

5. Assemble the Tartlets
  • Once the tart shells are cool, fill them generously with the smooth pear purée, spreading it evenly to the edges of the tartlets.

  • As a final touch, drizzle some Nesquik Squeeze over the pear filling. Use a spoon or small drizzle bottle to create a decorative swirl around the tart, adding a playful chocolatey flair to the presentation.

  • For an extra finishing touch, garnish the tartlets with food decoration pieces for a festive look, if desired.

6. Serve and Enjoy
