Ingredients:
- 1 whole chicken
- Adobo seasoning
- Season-All salt

Prepare Chicken:
- Put the chicken in a large baking dish. Use a knife and stab the chicken on both sides about 50 times, piercing the skin.

- Sprinkle Adobo seasoning all over both sides of the chicken very heavily.
- Take Season-All salt and sprinkle a medium amount on both sides.
- Rub the seasoning gently into the skin. Then lay the chicken skin side up and sprinkle a little more Adobo seasoning all over the top.

- Cover the chicken with plastic wrap and leave it overnight in the refrigerator to marinate and absorb the flavors.

- Preheat the oven to 325°F (160°C).
- Cover the chicken with aluminum foil and bake it for 1 and a half hours or until it’s nearly done.
- Uncover the chicken and brown the top as desired, either by increasing the oven temperature or using the broil setting. This step adds a delicious crispiness to the skin.
