Total Time: 1 hour and 10 minutes
Ingredients:
- 1/3 cup flour
- 1 cup fine graham cracker crumbs
- 3/4 cup baking chocolate
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup butter
- 1/3 cup sugar
- 2 eggs
- 2 ripe bananas, mashed
- Optional: Soft butter or cream cheese for serving
Instructions:
-
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
-
In a bowl, combine the almonds with flour, graham cracker crumbs, baking chocolate, baking powder, baking soda, and salt. Ensure all the dry ingredients are well mixed.
-
In another bowl, cream the butter with sugar until fluffy using a hand mixer or stand mixer.
-
Beat in the eggs, one at a time, until fully incorporated. Then, beat in the mashed bananas until the mixture is smooth and creamy.
-
Gradually add the almond-flour mixture to the wet ingredients, stirring gently until everything is evenly combined.
-
Spoon the batter into the prepared loaf pan, spreading it out evenly.
-
Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
-
Once baked, remove the bread from the oven and allow it to cool in the pan for a few minutes.
-
Transfer the bread to a wire rack to cool completely before slicing. This helps it set properly and makes slicing easier.
-
Once cooled, slice the bread into thin slices.
-
If desired, spread each slice with soft butter or cream cheese before serving.
