Sharone Huey’s Curried Goat

Cook Time: 1 hour
Prep Time: 1 hour
Total Time: 2 hours
Servings: 6

Ingredients:

  • 2 lbs goat meat, cut into bite-sized pieces
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 3 tbsp curry powder, divided
  • 4 cloves garlic, minced
  • 4 scallions, chopped
  • 2 onions, chopped
  • 4 tbsp butter
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cups water
  • 1/2 cup raisins
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup peanuts
  • Boiled rice, for serving

Instructions:

  1. In a glass bowl, season the goat meat with salt, black pepper, cayenne pepper, and 1 tablespoon of curry powder.

  2. Add minced garlic, chopped scallions, and onions to the seasoned meat. Allow it to marinate at room temperature for at least 1 hour.

  3. In a large cast-iron skillet over medium heat, melt butter.

  4. Scrape off the seasonings from the goat meat and reserve them for later use.

  5. Brown the seasoned goat meat in the melted butter for about 5 minutes, ensuring each piece is evenly browned.

  6. Add sliced red and green bell peppers to the skillet and sauté for an additional 3 minutes, allowing the flavors to meld together.

  7. Pour 2 cups of water into the skillet, then add the reserved seasonings.

  8. Reduce the heat, cover the skillet, and allow the mixture to simmer for 40 minutes, allowing the meat to tenderize and absorb the flavors.

  9. After 40 minutes, stir in the remaining 1 tablespoon of curry powder. Remove the skillet from heat, cover, and let it sit for an additional 10 minutes to allow the flavors to further develop.

  10. While the curry goat is resting, prepare the garnishes. Place raisins, coconut flakes, and peanuts in separate serving bowls.

  11. Serve the curried goat hot alongside boiled rice, and garnish with the raisins, coconut flakes, and peanuts.
