Salmon Baked on Cedar with Lobster Sauce

Cook Time: 15 minutes

Description: This sumptuous recipe, sourced from James Burnell, the acclaimed Chef at The Great Blue Heron Casino on Scugog Island, is a true delight for seafood lovers. Featuring tender salmon fillets baked on cedar planks and draped in a luxurious lobster sauce, this dish is both elegant and easy to prepare. It can also be grilled for a smoky twist.

Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 1/4 cup lobster meat, diced
  • 1/2 cup brandy
  • 2 cups heavy cream

Instructions:

  1. Prepare the Cedar Planks: Start by placing 2 pieces of salmon fillets on each cedar plank. Season the salmon fillets generously with salt and freshly ground black pepper. The cedar planks should be pre-soaked in water for at least an hour before using to prevent them from burning in the oven.

  2. Bake the Salmon: Preheat your oven to 400°F (200°C). Carefully place the cedar planks with the salmon fillets into the oven and bake for 15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  3. Make the Lobster Sauce: While the salmon is baking, heat olive oil in a small saucepan over medium heat. Add the finely chopped onion and sauté until it becomes translucent and fragrant.

  4. Add the Lobster Meat and Brandy: Stir in the diced lobster meat and cook for an additional minute to allow the flavors to meld. Carefully pour in the brandy, stirring continuously. Let it cook for about 2 minutes to allow the alcohol to evaporate.

  5. Finish the Sauce: Pour in the heavy cream, stirring gently. Let the mixture simmer over medium heat, stirring occasionally, until the cream has reduced by half and the sauce has thickened slightly.

  6. Season and Serve: Remove the sauce from the heat and season with salt and pepper to taste. Spoon the rich lobster sauce over the baked salmon fillets and serve immediately.
