Beef Broccoli Casserole Recipe
Ingredients
- 300 grams potatoes (peeled and coarsely grated)
- 300 grams ground beef
- 300 grams chopped broccoli
- 150 grams button mushrooms (or other mushrooms, boiled and sliced, optional)
- 100 grams coarsely grated carrots (optional)
- 1/2 onion (finely chopped)
- 150 grams mozzarella cheese (shredded)
- 4 slices cheese (preferably a melting cheese like cheddar)
- 250 ml chicken cream soup
- 2 tablespoons olive oil
- Salt and black pepper (to taste)
- Butter (for greasing the casserole dish)
- 1 casserole dish (22cm x 22cm)

Prepare the Ground Beef: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the ground beef and half of the chopped onion. Season with a pinch of salt and black pepper. Cook until the beef is browned and fully cooked, then remove from the heat and set aside.

Cook the Potatoes: In the same skillet, add another tablespoon of olive oil. Sauté the remaining chopped onion until translucent. Add the grated potatoes, season with salt and pepper, and cook until the potatoes are slightly dry and clump together. Remove from the heat and set aside.

Prepare the Casserole Mixture: In a large bowl, combine the chicken cream soup, chopped broccoli, sliced mushrooms (if using), grated carrots (if using), and the cooked ground beef. Stir in half of the shredded mozzarella cheese.

Assemble the Casserole: Preheat your oven to 180°C (350°F). Grease the casserole dish with a thin layer of butter. Spread the grated potatoes evenly on the bottom of the dish. Layer the cheese slices over the potatoes, then pour the beef and broccoli mixture on top. Finish by sprinkling the remaining shredded mozzarella cheese over the top.

Bake: Place the casserole in the preheated oven and bake for 45 minutes, or until the cheese is golden brown and bubbly.
