Bisquick baking mix 2 cups
Salt 1/2 teaspoon
Water 1/2 cup
Lean ground beef 1 pound
Onion, chopped 1 medium

Dried oregano 1/2 teaspoon
Fresh ground black pepper 1/4 teaspoon
Garlic granules 1/2 teaspoon
Onion powder 1/2 teaspoon
Cayenne pepper 1/2 teaspoon
Green bell peppers, chopped 1/2 cup
Red bell pepper, chopped 1/2 cup
Tomato sauce 1 cup
Broth 1/2 cup
Water 1/2 cup
Eggs 3 large
Milk or heavy cream 1/4 cup
Salt 1/2 teaspoon
Dry mustard 1/2 teaspoon
Yellow mustard 1 teaspoon
Dijon mustard 1 teaspoon
Fresh ground black pepper 1/4 teaspoon
Cayenne pepper 1/4 teaspoon
Bisquick baking mix 4 tablespoons
Onion, thinly sliced 1 small
Small curd cottage cheese 1 cup
Cheddar cheese, shredded 2 cups

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C) and coat a 10-inch glass deep pie plate with nonstick spray.

  2. Mix Bisquick baking mix with salt and water until a soft dough forms, then beat vigorously about 20 strokes.

  3. Gently smooth the dough into a ball on a well-floured board. Knead it 5 times, then roll it out to about 2 inches larger than the inverted pie plate.

  4. Ease the dough into the pie plate, press it into the bottom, flute the edges, and bake for 8-10 minutes or until lightly browned. Set aside.

  5. Crumble the ground beef into a medium frying pan. Add chopped onions, salt, pepper, garlic granules, onion powder, and cayenne pepper. Cook until the meat is browned and the onion is soft, continuing to break up the meat as it cooks.

  6. Drain any excess grease if necessary, then return the mixture to the pan.

  7. Add the chopped bell peppers, bread crumbs, tomato sauce, and broth. Stir to combine, then continue cooking, stirring regularly, until the liquid has been absorbed. Adjust seasonings to taste.

  8. Spread the meat mixture evenly in the bottom of the pre-baked crust.

  9. In a medium bowl, combine eggs, milk or cream, salt, dry mustard, yellow mustard, Dijon mustard, black pepper, cayenne pepper, 4 tablespoons of Bisquick baking mix, sliced onion, cottage cheese, and shredded cheddar cheese. Stir to combine, then allow the mixture to set for 5-10 minutes to let the flavors meld.

  10. Spread the egg mixture over the meat mixture in the pie crust, ensuring that the meat mixture is completely covered and the egg mixture seals against the crust on all sides. If desired, cover the exposed crust with strips of foil to prevent over-browning.

  11. Bake until the egg filling is set and lightly browned and the crust is golden brown, about 30 minutes.

  12. If the mixture is still wet and runny, reduce the heat to 275-300 degrees F (135-150 degrees C) and allow it to bake for another 5-10 minutes.
