1/4 Blue cheese
3/4 Heavy cream
1 Fresh thyme

Instructions:

  1. Preheat oven to 350°F.
  2. Grease an 11 x 7-inch baking dish; set aside.
  3. Melt butter in a large skillet over medium heat; add onions. Cook and stir for about 5 minutes or until onions are softened and translucent. Remove from heat and set aside to cool in a small bowl.
  4. In a large bowl, beat Neufchatel cheese with an electric mixer at medium speed until fluffy. Add blue cheese and beat until blended. Beat in cream, thyme, and salt at low speed until the mixture is fairly smooth. There may be some small lumps. Add the cooled onions and beat until blended. Set aside.
  5. Peel potatoes, then grate 1 potato into the cheese mixture using the large-holed section of a metal grater. Fold into the cheese mixture with a rubber spatula to prevent the potato from turning brown. Repeat with the remaining potatoes, one at a time.
  6. Pour the mixture into the prepared baking dish and cover with foil.
  7. Bake for 45 minutes.
  8. Uncover and bake for an additional 15 to 20 minutes, or until crisp around the edges.
  9. Turn oven to broil. Broil the casserole, 6 inches from the heat, for 3 to 5 minutes or until the top is golden brown.
  10. Remove from the oven and let it stand for 5 minutes before serving.
