Cloud Egg Cheese

Ingredients:

  • 3 large eggs
  • 75 grams cheddar cheese, grated

Instructions:

  1. Prepare the Eggs: Begin by separating the egg yolks from the egg whites into two separate bowls. Ensure there is no trace of yolk in the bowl with the whites, as this can prevent them from whipping properly.

  2. Whip the Egg Whites: Using an electric mixer, beat the egg whites until they form stiff peaks. This means the whites should be thick and glossy, standing upright when the beaters are lifted.

  3. Incorporate the Cheese: Gently fold the grated cheddar cheese into the whipped egg whites. Be careful not to over-mix; you want the cheese to be evenly distributed without deflating the airy whites.

  4. Preheat and Prepare the Oven: Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper and lightly grease it with a small amount of butter to prevent sticking.

  5. Shape and Bake: Divide the egg white mixture into three mounds on the prepared baking sheet. Use a spoon to create a slight indentation in the center of each mound to hold the egg yolk later. Bake in the preheated oven for 10 minutes, or until the edges are golden brown and the whites are set.

  6. Add the Yolks and Final Bake: Carefully remove the baking sheet from the oven. Gently place an egg yolk into the center of each cloud of egg white. Sprinkle additional grated cheddar cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the yolks are cooked to your desired doneness and the cheese is melted and slightly bubbly.

  7. Serve and Enjoy: Once baked, remove from the oven and serve immediately. Enjoy the light, fluffy texture of the cloud eggs with the rich flavor of melted cheese.
