Twice Baked Potatoes Recipe

Overview:

Twice Baked Potatoes are a cherished family recipe, originating from my dad’s kitchen and traditionally served alongside our Christmas prime rib dinner. These delightful potatoes are so irresistible that I often find myself doubling or tripling the recipe. What’s more, I’ve discovered a convenient trick for meal prep: after stuffing the potatoes, I lay them on a cookie sheet, freeze them, then store them in airtight bags for future enjoyment! This recipe yields creamy, cheesy potatoes with a crispy golden-brown topping, making them a perfect accompaniment to any meal.

  • Preparation Time: 20 minutes
  • Cooking Time: 1 hour 30 minutes
  • Total Time: 1 hour 50 minutes
  • Servings: 4

Ingredients:

  • 4 russet baking potatoes
  • 1 cup cheddar cheese, shredded
  • 1 can (12 oz) evaporated milk
  • 2 tablespoons butter
  • Salt, to taste
  • White pepper, to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley, chopped
  • Optional: gouda cheese, monterey jack cheese

Instructions:

  1. Bake Potatoes: Preheat your oven to 400ยฐF (200ยฐC). Place the potatoes directly on the oven rack and bake for 1 hour until tender.

  2. Prepare Potatoes: While the potatoes are still hot, carefully cut an oval wedge out of the top of each potato. Scoop out the pulp, leaving a thin layer around the edges of the skins to maintain their shape. Set the hollowed-out skins aside on a large baking sheet.

  3. Mash Potato Pulp: In a mixing bowl, mash the potato pulp using a hand masher until smooth. Season with garlic powder, salt, and white pepper to taste. Add the butter and continue mashing until well combined.

  4. Blend with Milk: Gradually pour the hot evaporated milk, about 1/4 cup at a time, into the mashed potatoes while using a mixer on medium speed. Repeat this process until the mixture reaches a creamy mashed potato consistency.

  5. Add Flavor: Mix in the chopped parsley and gradually incorporate 3/4 of the shredded cheddar cheese, ensuring it’s evenly distributed throughout the potato mixture. This is also the perfect time to add any optional ingredients of your choice.

  6. Stuff Potatoes: Refill the hollowed-out potato skins with the creamy mashed potato mixture, ensuring they are generously filled.

  7. Bake Again: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the tops start to turn golden brown.

  8. Top with Cheese: Once the potatoes are slightly browned, remove them from the oven and sprinkle the remaining shredded cheddar cheese on top. Return them to the oven and bake until the cheese is melted and bubbly.

  9. Serve: Carefully transfer the hot twice baked potatoes to a serving platter and garnish with extra parsley if desired. Serve them alongside your favorite main course and enjoy the creamy, cheesy goodness!
