Description:
This is a cherished recipe that I first discovered in 1988 on the back of a smoked sausage package. It quickly became a favorite for my husband and me, perfect for dinners with leftovers for lunch. Unfortunately, during a move, the recipe was misplaced, and my attempts to recreate it from memory never quite matched up. Imagine my delight when, in 1999, my mother-in-law gave me a promotional copy of Quick Cooking magazine, where I found the very recipe I had been longing for! Since then, this Quick Sausage & Rice Skillet has once again become a family favorite. The original recipe called for cheddar cheese, but I find using extra-sharp cheddar enhances the flavor, allowing us to use less cheese without sacrificing taste.


Ingredients

  • 1 cup water πŸ’§
  • 1 1/2 tablespoons butter 🧈
  • 1 can (10 3/4 oz) cream of celery soup πŸ₯£
  • 1 package (1 lb) kielbasa or smoked sausage, sliced into rounds 🌭
  • 3/4 cup long grain rice 🍚
  • 1 can (10 oz) mushroom stems and pieces, drained πŸ„
  • 1 cup frozen peas 🟒
  • 1 cup shredded extra-sharp cheddar cheese πŸ§€

Instructions

  1. Combine Soup, Water, and Butter:

    • In a deep skillet (make sure it has a lid), combine the cream of celery soup, 1 cup of water, and 1 1/2 tablespoons of butter. Bring this mixture to a boil over medium-high heat. πŸ”₯πŸ₯£
  2. Add Sausage and Rice:

    • Once boiling, add the sliced kielbasa or smoked sausage and 3/4 cup of long grain rice to the skillet. 🌭🍚
  3. Simmer:

    • Reduce the heat to low, cover the skillet, and let it simmer for about 18 minutes, or until the rice is almost tender. 🍳⏱️
  4. Add Peas and Mushrooms:

    • Stir in 1 cup of frozen peas and the drained mushrooms. πŸŸ’πŸ„
  5. Simmer Again:

    • Cover the skillet once more and let it simmer for an additional 15 minutes, or until the rice is fully tender and the peas are heated through. 🍳⏱️
  6. Sprinkle with Cheese:

    • Sprinkle 1 cup of shredded extra-sharp cheddar cheese over the top of the skillet. πŸ§€
  7. Melt the Cheese:

    • Cover the skillet and let it stand for about 5 minutes, allowing the cheese to melt completely. πŸ§€βŒ›

Note:
I once tried making this recipe with cream of mushroom soup, but the cream of celery is truly essential to achieving the desired flavor. Stick with the cream of celery for the best results! 🌟
